Blueberry Muffins

Ingredients

  • 1 ½ cups all-purpose flour

  • 3/4 cup granulated sugar and 1 teaspoon for sugar

  • 1/4 teaspoon Salt

  • 2 teaspoons baking powder

  • 1/3 cup avocado oil

  • 1 large egg

  • 1/2 cup milk

  • 1 ½ teaspoons vanilla extract

  • 1 cup blueberries


Instructions

  1. Heat oven to 400° Fahrenheit. Place muffin lines in pan.

  2. Combine flour, sugar, baking powder and salt in a large bowl.

  3. In a smaller bowl, add oil, egg, milk, and vanilla and whisk together.

  4. Add milk mixture to dry ingredients and combine. Do not over mix.

  5. Fold in the blueberries.

  6. Divide the batter between muffin cups in pan. Spread 1 teaspoon sugar even over all muffins.

  7. Bake 15-20 minutes.

  8. Transfer to a cooling rack and enjoy!
