Ingredients:
1 ½ cups all-purpose flour
¾ cup granulated sugar
½ teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 large egg
1/3 cup milk (you can use dairy or non-dairy milk)
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries
2 tablespoons flour (for coating blueberries)
Optional: 1 tablespoon coarse sugar for topping
Instructions:
Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease with cooking spray.
In a large bowl, whisk together the flour, sugar, salt, and baking powder.
In a separate small bowl, mix the vegetable oil, egg, milk, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not over mix; the batter should be lumpy.
Toss the blueberries with 2 tablespoons of flour to prevent them from sinking to the bottom of the muffins. Gently fold the blueberries into the batter.
Divide the batter evenly among the muffin cups, filling each about 2/3 full. If desired, sprinkle the tops with coarse sugar for a crunchy topping.
Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.
