Ingredients
10oz Barilla protein penne
1 cup grilled corn
1/2 cup cotija cheese
1 tbsp cilantro
1/2 cup plain greek yogurt
1/4 cup mayo
zest from 1/2 lime
1 tbsp water
1/2 tsp garlic powder
1/2 tsp cayenne pepper
salt and pepper
Directions
Boil pasta according to the insructions.
Coat the corn in olive oil and cook over medium heat, seasoning with salt and pepper until throughly grilled.
Combine all wet ingredients and seasonings, then in a bowl coat your pasta and corn in the dressing. Top with cilantro and cotija cheese.
