Red, White & Blueberry Salsa

Servings: 6–8

Ingredients:
1 cup fresh blueberries
1 cup strawberries, diced
1 small crisp apple (like Honeycrisp or Fuji), diced
1 small red bell pepper, finely diced
¼ cup red onion, finely chopped
¼ cup fresh cilantro or mint, chopped
1 jalapeño, seeded and finely diced (optional)
Juice of 1 lime
Salt, to taste
Instructions:
Wash and dry all produce. Dice the apple last and toss it in lime juice right away to prevent browning.
In a large bowl, combine blueberries, strawberries, apple, red bell pepper, red onion, herbs, and jalapeño.
Add the rest of the lime juice and a pinch of salt. Gently mix.
Let sit for 10–15 minutes to develop flavor. Serve with blue corn chips or spoon over grilled chicken, shrimp, or fish.
