Red, White & Blueberry Salsa

Ingredients:

  • 1 cup fresh blueberries

  • 1 cup strawberries, diced

  • 1 small crisp apple (like Honeycrisp or Fuji), diced

  • 1 small red bell pepper, finely diced

  • ¼ cup red onion, finely chopped

  • ¼ cup fresh cilantro or mint, chopped

  • 1 jalapeño, seeded and finely diced (optional)

  • Juice of 1 lime

  • Salt, to taste


Instructions:

  1. Wash and dry all produce. Dice the apple last and toss it in lime juice right away to prevent browning.

  2. In a large bowl, combine blueberries, strawberries, apple, red bell pepper, red onion, herbs, and jalapeño.

  3. Add the rest of the lime juice and a pinch of salt. Gently mix.

  4. Let sit for 10–15 minutes to develop flavor. Serve with blue corn chips or spoon over grilled chicken, shrimp, or fish.
