Breakfast Burritos

Prep time: 5 minutes Cook time: 20 minutes Total: 25 minutes Serving size: 6


Ingredients:

  • 3 Peppers

  • 2 oz. green onions

  • 6 of your desired sausages

  • 12 eggs

  • 6 slices of your desired cheese

  • 6 tortillas

  • salt and pepper

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon dry cilantro


Instructions:

  1. Wisk eggs, cilantro, garlic powder together in a large bowl.

  2. Add oil to a pan, peppers, spring onion and sausage. Add salt and pepper as ddesired and fry over medium heat for 7 minutes.

  3. Remove the sausages and peppers from the pan. In the same pan add the egg mixture and reduce to low heat. Cook for 5 minutes or until the eggs are scrambled and fully cooked.

  4. Remove eggs from pan and assemble your burrito. Add a slice of your desired cheese, eggs, cooked peppers and sausage mixture. Wrap the burrito and seal it in a pan for around 2 minutes over medium/low heat.

  5. To use for meal prep, wrap burritos in tin foil, individually, and place in a ziplock bag. Put the burritos in the freezer or fridge and reheat when hungry!
