Garlic Sesame Tofu (Vegan and Gluten free!)

Prep time: 5 minutes Cook time: 35 minutes Total: 40 minutes

Ingredients
1 block of firm tofu
1 tablespoon corn starch
4 tablespoons gluten free breadcrumbs
1/3 cup gluten free soy sauce
2 1/2 teaspoon toasted sesame oil
1 tablespoon rice vinegar
1 tablespoon olive oil
3 tablespoons maple syrup or honey
4 tablespoons water
4 cloves garlic
Instructions:
Preheat oven to 400 degrees Fahrenheit
Drain liquid from tofu and pat dry with a towel
Cut tofu into 1 inch cubes (or preferred size) and add to a bowl. Add 1 tablespoon of soy sauce in the bowl of tofu.
Add cornstarch and toss. Toss tofu in breadcrumbs until evenly coated.
Put the tofu on a baking tray and bake for 35 minutes or until golden brown.
Prep the sauce while tofu is baking.
Mince garlic and saute with oil in a pan until lightly golden brown.
Add in 1/3 cup soy sauce, maple syrup/ honey, 2 tablespoons water, sesame oil, and rice vinegar.
In another bowl, whisk cornstarch and 2 tablespoons of water and add to the pan.
Put on low heat until the sauce bubbles and thickens (about 4 minutes).
After the tofu is golden brown, toss with the sauce.
Serve tofu with rice and broccoli or eat as is!
