Chicken Fajitas

Ingredients:

  • 1 lb boneless, skinless chicken breasts, sliced into thin strips

  • 3 bell peppers, sliced

  • 1 small red onion, sliced

  • 1 tablespoon olive oil

  • 2 teaspoons chili powder

  • 1 teaspoon cumin

  • ½ teaspoon smoked paprika

  • ½ teaspoon dried oregano

  • ¼ teaspoon salt (or to taste)

  • ¼ teaspoon black pepper

  • Juice of 1 lime

  • 8 whole-wheat tortillas


Directions:

  1. In a large bowl, toss the chicken strips with chili powder, cumin, smoked paprika, oregano, salt, black pepper, and lime juice. Let sit while you prepare the veggies.

  2. Heat a large skillet over medium-high heat and add ½ tablespoon of olive oil. Add the chicken and cook for about 5-6 minutes until golden brown. Remove from the skillet and set aside.

  3. In the same skillet, add the remaining ½ tablespoon of olive oil. Toss in the bell peppers and onions, cooking for about 5 minutes until tender.

  4. Return the chicken to the skillet and mix everything together. Cook for an additional 1-2 minutes.

  5. Heat tortillas in a dry pan for 30 seconds per side.

  6. Divide the chicken and veggie mixture among the tortillas, then top with options like avocado, Greek yogurt, salsa, etc.
