Chicken Fajitas

Ingredients:
1 lb boneless, skinless chicken breasts, sliced into thin strips
3 bell peppers, sliced
1 small red onion, sliced
1 tablespoon olive oil
2 teaspoons chili powder
1 teaspoon cumin
½ teaspoon smoked paprika
½ teaspoon dried oregano
¼ teaspoon salt (or to taste)
¼ teaspoon black pepper
Juice of 1 lime
8 whole-wheat tortillas
Directions:
In a large bowl, toss the chicken strips with chili powder, cumin, smoked paprika, oregano, salt, black pepper, and lime juice. Let sit while you prepare the veggies.
Heat a large skillet over medium-high heat and add ½ tablespoon of olive oil. Add the chicken and cook for about 5-6 minutes until golden brown. Remove from the skillet and set aside.
In the same skillet, add the remaining ½ tablespoon of olive oil. Toss in the bell peppers and onions, cooking for about 5 minutes until tender.
Return the chicken to the skillet and mix everything together. Cook for an additional 1-2 minutes.
Heat tortillas in a dry pan for 30 seconds per side.
Divide the chicken and veggie mixture among the tortillas, then top with options like avocado, Greek yogurt, salsa, etc.
