Chicken Salad

Ingredients:
2 cups cooked chicken breast, shredded or diced
½ cup plain Greek yogurt
1 tablespoon olive oil
1 teaspoon Dijon mustard
1 teaspoon lemon juice or apple cider vinegar
Salt and black pepper to taste
½ cup celery, finely chopped
¼ cup red onion, finely diced
¼ cup chopped almonds
¼ cup grapes, halved
2 tablespoons fresh parsley, chopped
Directions:
In a large bowl, mix the Greek yogurt, olive oil, Dijon mustard, lemon juice, salt, and black pepper until smooth.
Stir in the shredded chicken, celery, red onion, nuts and grapes. Mix until well combined.
Taste and add more lemon juice, salt, or pepper as needed.
Let the salad chill for at least 10 minutes. Serve on whole-grain bread, with whole-grain crackers, in lettuce wraps, or over mixed greens.
