Cottage Cheese Crust Pizza with Veggie Toppings

Prep Time: 15 minutes

Cook Time: 25 minutes (crust) + 7 minutes (with toppings)

Servings: 2–3


Ingredients:


For the Cottage Cheese Crust:

  • 1 cup low-fat cottage cheese

  • 2 large eggs

  • ½ cup grated Parmesan cheese

  • ½ cup shredded mozzarella cheese

  • ¼ cup almond flour (or oat flour)

  • ¼ tsp garlic powder (optional)

  • ¼ tsp Italian seasoning

  • Pinch of salt


For the Pizza Toppings:

  • ¼ cup tomato sauce (no sugar added or homemade)

  • ¾ cup shredded mozzarella cheese

  • ½ cup sliced cherry tomatoes

  • ¼ cup sliced black olives

  • ½ cup baby spinach leaves

  • ¼ red onion, thinly sliced

  • Fresh basil or arugula for topping

  • Crushed red pepper or balsamic glaze (optional)


Instructions:


Step 1: Make the Crust

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease.

  2. In a food processor or blender, combine cottage cheese, eggs, and Parmesan. Blend until smooth.

  3. Pour into a bowl, then stir in mozzarella, almond flour, garlic powder, Italian seasoning, and salt until a thick batter forms.

  4. Spread into a 10–12" circle on the parchment paper (about ¼-inch thick).

  5. Bake for 20–25 minutes, until the crust is golden and firm. Optional: Flip crust carefully after 20 minutes and bake 5 more for a crispier base.


Step 2: Add Toppings

  1. Spread tomato sauce evenly over the crust.

  2. Sprinkle mozzarella on top, followed by spinach, tomatoes, olives, and red onion.


Step 3: Bake Again

  1. Return to oven for 7–8 minutes, until cheese is melted and bubbly.

  2. Let cool slightly, then top with fresh basil or arugula. Drizzle with balsamic glaze or sprinkle red pepper flakes if desired.
