Cottage Cheese Pancakes

Servings: 2 (makes about 6 small pancakes)


Ingredients:

  • ½ cup cottage cheese (low-fat or full-fat)

  • 2 eggs

  • ¼ cup oat flour (or blended rolled oats)

  • ½ teaspoon baking powder

  • ½ teaspoon vanilla extract 

  • Pinch of salt


Optional add-ins:

  • 1–2 teaspoons maple syrup or honey

  • ¼ teaspoon cinnamon

  • Fresh blueberries or banana slices


Instructions:

  1. In a blender or mixing bowl, combine cottage cheese, eggs, oat flour, baking powder, vanilla, and salt. Blend until smooth (or whisk well if you like texture).

  2. Heat a nonstick skillet or griddle over medium heat and lightly grease with oil or butter.

  3. Pour batter onto the pan (about 2 tablespoons per pancake). Cook for 2–3 minutes until bubbles form, then flip and cook for another 1–2 minutes until golden.

  4. Enjoy warm with toppings like Greek yogurt, fruit, nut butter, or a drizzle of maple syrup.
