Greek Chickpea Salad

Ingredients:

  • 1 (15-ounce) can chickpeas, drained and rinsed

  • 1 ½ cups cherry tomatoes, halved

  • 1 small cucumber, diced

  • ¼ red onion, thinly sliced

  • ¼ cup Kalamata olives, sliced

  • ¼ cup feta cheese, crumbled

  • 2 tablespoons fresh parsley, chopped

  • 1 tablespoon fresh dill, chopped (optional)


Dressing:

  • 3 tablespoons extra virgin olive oil

  • 1 tablespoon red wine vinegar

  • 1 teaspoon lemon juice

  • ½ teaspoon dried oregano

  • Salt and black pepper to taste


Directions:

  1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, olives, feta, parsley, and dill.

  2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, dried oregano, salt, and black pepper.

  3. Pour the dressing over the salad and toss gently to coat everything evenly.
