Jack-O-Lantern Stuffed Peppers

Ingredients

  • 6 orange bell peppers

  • 1 lb lean ground turkey or plant-based alternative

  • 1 cup cooked quinoa or brown rice

  • 1 cup diced tomatoes (canned or fresh)

  • 1 small onion, diced

  • 1 cup spinach, chopped

  • 1/2 cup shredded low-fat cheese (optional)

  • 1 tsp garlic powder

  • 1 tsp chili powder

  • Salt and pepper, to taste

  • Olive oil spray


Instructions

  1. Prep the Peppers: Slice the tops off the bell peppers and remove seeds and membranes. Carefully carve jack-o-lantern faces on each pepper.

  2. Cook the Filling: In a large skillet, cook the ground turkey or alternative with diced onions over medium heat until browned. Add the garlic powder, chili powder, salt, and pepper.

  3. Combine Ingredients: Stir in cooked quinoa or rice, diced tomatoes, and spinach. Mix until heated and well combined.

  4. Stuff the Peppers: Fill each pepper with the mixture. Top with a sprinkle of shredded cheese if desired.

  5. Bake: Place peppers upright in a baking dish, spray lightly with olive oil, and bake at 350°F (175°C) for 20-25 minutes or until peppers are tender.

  6. Serve: Enjoy these fun, festive peppers as a main dish or serve alongside a salad for a balanced meal!
