Ingredients
6 orange bell peppers
1 lb lean ground turkey or plant-based alternative
1 cup cooked quinoa or brown rice
1 cup diced tomatoes (canned or fresh)
1 small onion, diced
1 cup spinach, chopped

1 tsp garlic powder
1 tsp chili powder

Instructions
Prep the Peppers: Slice the tops off the bell peppers and remove seeds and membranes. Carefully carve jack-o-lantern faces on each pepper.
Cook the Filling: In a large skillet, cook the ground turkey or alternative with diced onions over medium heat until browned. Add the garlic powder, chili powder, salt, and pepper.
Combine Ingredients: Stir in cooked quinoa or rice, diced tomatoes, and spinach. Mix until heated and well combined.
Stuff the Peppers: Fill each pepper with the mixture. Top with a sprinkle of shredded cheese if desired.
Bake: Place peppers upright in a baking dish, spray lightly with olive oil, and bake at 350°F (175°C) for 20-25 minutes or until peppers are tender.
