Marry Me Tofu

Prep Time: 10 minutes Cook Time: 20 Total: 30 minutes

Tofu Ingredients:
1 block firm tofu
1/4 tsp salt
1/4 tsp pepper
3 tbsp flour
Sauce Ingredients:
3 cloves garlic
1 cup vegetable broth
1 cup culinary cream
2 tbsp olive oil
2 tbsp yeast
1/2 tsp oregano
1/4 tsp thyme
1/4 tsp salt
1/3 cup sun-dried tomatoes
chopped fresh basil leaves
1 tsp crushed red pepper flakes
Instructions:
Drain tofu and tear into small pieces
Add flour, tofu, salt and pepper to a bowl and toss to coat tofu in flour.
Heat olive oil in a large non-stick pan over medium heat. When warm, add tofu pieces.
Fry tofu for 3 minutes or until golden brown. Remove tofu from the pan.
In the same pan, add garlic and cook until slightly brown. Add vegetable broth and stir. Add cream, yeast, salt, thyme, red pepper flakes, and oregano. Mix and simmer/ cook for 4 minutes.
Add in the browned tofu to the pan and stir in sun-dried tomatoes. Cook for 3 minutes
Serve over pasta, rice or quinoa and garnish with basil.
