One Pan Roasted Chicken and Broccoli


Prep Time: 5 minutes Cook Time: 20-30 minutes Servings: 4



Ingredients:

  • 1-1.5lb boneless and skinless chicken breasts or cutlets. If breasts, cut into smaller pieces.

  • 1 lb Broccoli, cut or broken into into smaller pieces

  • 3 Cloves of Garlic

  • 2 Tbsp Butter, melted

  • ¼ cup Chicken Broth

  • 1 Tbsp Italian Seasoning

  • Salt and Pepper to taste

  • Cooking spray or oil - for pan


Instructions:

  1. Preheat oven to 425 degrees. Prep sheet pan with cooking spray or wipe with cooking oil to prevent food from sticking to pan.

  2. Mix together: Melted butter, garlic gloves, chicken broth, and Italian seasoning

  3. Toss the chicken and broccoli in a bowl with the chicken broth mixture. This liquid mixture will help keep the chicken moist.

  4. Spread chicken, broccoli, and remaining liquid onto baking sheet.

  5. Place in a preheated oven for 12-15 minutes until everything is fully cooked, or the chicken reaches an internal temperature of 165 degrees Fahrenheit. If your chicken pieces are larger, they may need additional time in the oven until fully cooked.

  6. Once chicken is fully cooked, take baking sheet out of oven, serve, and enjoy!
