Protein Chocolate Chip Cookies

Ingredients:

  • 1 cup oat flour (or blended rolled oats)

  • ½ cup vanilla or chocolate protein powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • ¼ cup natural peanut butter or almond butter

  • ¼ cup maple syrup or honey

  • 1 egg

  • 1 teaspoon vanilla extract

  • 2 tablespoons milk (any kind)

  • ⅓ cup mini chocolate chips or chopped dark chocolate


Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a mixing bowl, whisk together oat flour, protein powder, baking soda, and salt.

  3. In another bowl, mix peanut butter, maple syrup, egg, vanilla, and milk until smooth.

  4. Add wet ingredients to dry and stir until a dough forms. Fold in chocolate chips.

  5. Scoop about 1½ tablespoons of dough per cookie onto the baking sheet. Flatten slightly.

  6. Bake for 8–10 minutes, or until edges are set. They’ll firm up as they cool.

  7. Let cool on the pan for 5 minutes, then transfer to a wire rack.
