Pumpkin Pie Overnight Oats

Ingredients

  • 1/4 cup plain nonfat greek yogurt (or use vanilla!)

  • 1/2 cup unsweetened vanilla almond milk (or any milk)

  • 1/4 cup pumpkin puree

  • 2 tablespoons pure maple syrup

  • 1/2 teaspoon vanilla extract

  • 1/2 cup rolled oats (gluten free if desired)

  • 2 teaspoons chia seeds

  • 1/2 teaspoon pumpkin pie spice

  • 1/4 teaspoon cinnamon


Ingredients

  1. In a medium bowl, whisk together the Greek yogurt, almond milk, pumpkin puree, vanilla extract, and maple syrup until smooth and well combined.

  2. Stir in the oats, chia seeds, and pumpkin pie spice.

  3. Taste and, if desired, add more maple syrup for extra sweetness.

  4. Pour the mixture into a glass jar or container, cover, and refrigerate for at least 4 hours or overnight. Enjoy your single serving of pumpkin overnight oats!
