Red, White & Blue Stuffed Mushrooms

Servings: 20 mushrooms (about 6–8 people)


Ingredients:

  • 20 large white or cremini mushrooms, stems removed and reserved

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • ¼ cup roasted red peppers, finely chopped

  • 4 oz cream cheese, softened

  • ¼ cup crumbled feta or goat cheese 

  • 1 tbsp fresh parsley, chopped

  • Salt and black pepper, to taste

  • 2 tbsp panko breadcrumbs (optional, for topping)


Optional Patriotic Glaze:

  • 2 tbsp blueberry preserves or jam

  • 1 tsp balsamic vinegar

  • Pinch of salt


Instructions:

  1. Preheat Oven to 375°F (190°C)Line a baking sheet with parchment or foil.

  2. Clean mushrooms with a damp towel. Remove and finely chop stems.

  3. Heat olive oil in a skillet. Add chopped mushroom stems and garlic; cook for 3–4 minutes. Stir in red peppers and cook 1 minute more. Remove from heat.

  4. In a bowl, mix cream cheese, feta, sautéed mixture, parsley, salt, and pepper until smooth.

  5. Fill each mushroom cap with the cheese mixture. Sprinkle tops with breadcrumbs if using.

  6. Place on baking sheet and bake for 18–20 minutes, until mushrooms are tender and tops are golden.

  7. Add Blueberry Glaze (Optional):While mushrooms bake, warm blueberry preserves with balsamic vinegar in a small pan. Drizzle lightly over mushrooms after baking for a touch of festive blue color and sweetness.


Make It Extra Festive:

  • Top with a tiny American flag toothpick.

  • Arrange in red, white, and blue patterns on the platter.
