Shrimp Fajitas

Ingredients:
Shrimp & Veggies:
1 lb raw shrimp, peeled and deveined
1 tbsp olive oil
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 red onion, thinly sliced
1 tsp chili powder
1 tsp smoked paprika
½ tsp cumin
½ tsp garlic powder
Salt & pepper to taste
Juice of ½ lime
To Serve:
8 small flour tortillas (or whole wheat)
Sliced avocado or guacamole
Fresh cilantro, chopped
Greek yogurt or sour cream
Salsa or pico de gallo
Lime wedges
Instructions:
Toss shrimp with lime juice, chili powder, paprika, cumin, garlic powder, salt, and pepper. Set aside.
Heat ½ tbsp olive oil in a large skillet over medium-high heat. Add peppers and onions, and sauté for 5–6 minutes, until softened and lightly charred. Remove from skillet.
Add remaining oil to the same pan. Add shrimp in a single layer and cook 2–3 minutes per side until opaque and lightly golden. Return veggies to the pan and toss everything together.
Heat tortillas on a dry skillet or in the microwave for 10–15 seconds.
Fill each tortilla with shrimp and veggies, then top with avocado, cilantro, and a dollop of Greek yogurt or salsa.
