Shrimp Fajitas

Ingredients:

Shrimp & Veggies:

  • 1 lb raw shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 1 red onion, thinly sliced

  • 1 tsp chili powder

  • 1 tsp smoked paprika

  • ½ tsp cumin

  • ½ tsp garlic powder

  • Salt & pepper to taste

  • Juice of ½ lime

To Serve:

  • 8 small flour tortillas (or whole wheat)

  • Sliced avocado or guacamole

  • Fresh cilantro, chopped

  • Greek yogurt or sour cream

  • Salsa or pico de gallo

  • Lime wedges


Instructions:

  1. Toss shrimp with lime juice, chili powder, paprika, cumin, garlic powder, salt, and pepper. Set aside.

  2. Heat ½ tbsp olive oil in a large skillet over medium-high heat. Add peppers and onions, and sauté for 5–6 minutes, until softened and lightly charred. Remove from skillet.

  3. Add remaining oil to the same pan. Add shrimp in a single layer and cook 2–3 minutes per side until opaque and lightly golden. Return veggies to the pan and toss everything together.

  4. Heat tortillas on a dry skillet or in the microwave for 10–15 seconds.

  5. Fill each tortilla with shrimp and veggies, then top with avocado, cilantro, and a dollop of Greek yogurt or salsa.
