Spinach Quesadilla

Ingredients

  • 2 whole wheat tortillas

  • 1 cup fresh spinach, chopped

  • ½ cup shredded mozzarella cheese

  • ¼ cup crumbled feta cheese

    ½ small red onion, thinly sliced

  • 1 small garlic clove, minced

  • ½ teaspoon olive oil

  • ¼ teaspoon chili flakes

  • Salt and black pepper to taste


Directions:

  1. Heat olive oil in a pan over medium heat. Add garlic and red onion, cooking for about 1-2 minutes until fragrant. Stir in the spinach and cook until wilted (about 1 minute). Season with salt, black pepper, and chili flakes. Remove from heat.

  2. Place one tortilla on a flat surface. Sprinkle half of the cheese over one side, then spread the spinach mixture on top. Add feta and the remaining cheese. Place the second tortilla on top.

  3. Heat a skillet over medium heat. Place the quesadilla in the pan and cook for 2-3 minutes on each side until golden brown and the cheese is melted.

  4. Remove from the skillet, let cool for a minute, and slice into pieces. Serve with salsa, avocado, or Greek yogurt.
