Spinach Quesadilla

Ingredients
2 whole wheat tortillas
1 cup fresh spinach, chopped
½ cup shredded mozzarella cheese
¼ cup crumbled feta cheese
½ small red onion, thinly sliced
1 small garlic clove, minced
½ teaspoon olive oil
¼ teaspoon chili flakes
Salt and black pepper to taste
Directions:
Heat olive oil in a pan over medium heat. Add garlic and red onion, cooking for about 1-2 minutes until fragrant. Stir in the spinach and cook until wilted (about 1 minute). Season with salt, black pepper, and chili flakes. Remove from heat.
Place one tortilla on a flat surface. Sprinkle half of the cheese over one side, then spread the spinach mixture on top. Add feta and the remaining cheese. Place the second tortilla on top.
Heat a skillet over medium heat. Place the quesadilla in the pan and cook for 2-3 minutes on each side until golden brown and the cheese is melted.
Remove from the skillet, let cool for a minute, and slice into pieces. Serve with salsa, avocado, or Greek yogurt.
