Sriracha & Honey Meatballs

Ingredients

Meatballs:
2 lbs ground chicken
1 cup breadcrumbs
2 eggs
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
Sauce:
1/4 cup Sriracha
3 tablespoons reduced-sodium soy sauce
1/2 Tbsp ground ginger
3 cloves garlic, minced
3 tablespoons rice vinegar
3 tablespoons honey
Directions:
Preheat oven to 375 degrees F.
In a mixing bowl, mix together the chicken, breadcrumbs, eggs, garlic and salt and red pepper flakes.
Shape into 1.5 -inch balls and place on baking sheets with parchment paper.
Bake for 20-25 minutes.
While baking the meatballs, combine sauce ingredients in a small saucepan and bring to boil while whisking.
Reduce heat and simmer for 8 to 10 minutes then toss with the meatballs.
