Sriracha & Honey Meatballs

Ingredients 


Meatballs:

  • 2 lbs ground chicken

  • 1 cup breadcrumbs

  • 2 eggs

  • 1 teaspoon minced garlic

  • 1/2 teaspoon salt

  • 1/4 teaspoon red pepper flakes

Sauce:

  • 1/4 cup Sriracha

  • 3 tablespoons reduced-sodium soy sauce

  • 1/2 Tbsp ground ginger

  • 3 cloves garlic, minced

  • 3 tablespoons rice vinegar

  • 3 tablespoons honey


Directions:

  1. Preheat oven to 375 degrees F.

  2. In a mixing bowl, mix together the chicken, breadcrumbs, eggs, garlic and salt and red pepper flakes.

  3. Shape into 1.5 -inch balls and place on baking sheets with parchment paper.

  4. Bake for 20-25 minutes.

  5. While baking the meatballs, combine sauce ingredients in a small saucepan and bring to boil while whisking.

  6. Reduce heat and simmer for 8 to 10 minutes then toss with the meatballs.
