Stuffed Peppers

Ingredients:
1 lb ground turkey
1½ cups partially cooked rice
3 cloves garlic, minced
½ cup onion, minced
¼ cup parsley, chopped
1 large egg
1 cup + 3 tablespoons crushed tomatoes, divided
1 ½ teaspoons salt
1 cup water
4 large bell peppers (cut off tops, get rid of seeds, and middle core)
½ cup shredded cheese of your liking, divided
Directions:
In a large bowl combine ground turkey, rice, garlic, onion, parsley, egg, 3 tablespoons crushed tomato and 1¼ teaspoons salt and mix.
Combine remaining crushed tomato, water and remaining salt in a saucepan (large enough for the peppers)
Fill each pepper with 1 cup of mixture and place stuffed peppers into sauce. Spoon some sauce over each bell pepper.
Cover and cook the peppers on medium-low heat for 35-45 minutes, until tender. Spoon more sauce over each and add a few tablespoon's of shredded cheese to the top of each pepper, cover, and cook until melted, for a few minutes.
