Tofu Tacos

Ingredients:
For tofu:
1 14 ounce package extra-firm tofu, drained
½ cup diced onion
2 small garlic cloves, minced
1 tablespoon avocado oil
3 tablespoons low sodium soy sauce or coconut aminos
1 tablespoon tomato sauce
1 teaspoon cumin
2 teaspoon smoked paprika
1 teaspoon ground coriander
Toppings:
Cheese
Chopped, tomatoes, lettuce, and onions
Avocado, greek yogurt, or salsa
Directions:
Dry out the tofu as much as possible with paper towels.
Preheat the oven to 400°F.
Line a sheet pan with parchment paper.
In a medium bowl, whisk together the diced onions, minced garlic, oil, soy sauce, tomato sauce, and spices. Crumble the tofu into small pieces directly into the bowl. Gently toss until the tofu is evenly coated in the seasoning mixture.
Spread the seasoned tofu in an even layer on the parchment-lined sheet pan.
While the tofu is cooking, warm the tortillas on a pan.
Assemble the tacos using toppings and tofu.
