Ingredients:
1 cup walnuts
2 tbsp maple syrup
1/4 tsp cinnamon
pinch of crushed red pepper
pinch of salt
1/3 cup olive oil
1//4 cup balsamic vinegar
1 tbsp fig preserves
6 cups mixed greens
2 cups,pomegranate arils
1/2 cup crumbled goat cheese
1/2 cup dried cranberries
Directions:
Toss walnuts with maple syrup, cinnamon, and a pinch of crushed red pepper and salt. Spread on a parchment-lined baking sheet and bake at 375°F for 10 minutes. Let cool.
For the dressing, whisk together the olive oil, balsamic vinegar, fig preserves, salt, and pepper until smooth. Then toss with the mixed greens.
Top with pomegranate arils, goat cheese, dried cranberries, and candied walnuts.
