Ingredients
2 lb carrots
1/4 cup brown sugar
2 garlic cloves
2 tbsp butter (30g)
1 tbsp olive oil
pinch of salt to taste
pinch of black pepper to taste
pinch of Parsley to taste
Instructions
Preheat oven to 400F degrees.
Cut carrot length wise.
Toss in a bowl with sugar, butter, garlic, oil, salt and pepper.
Pour onto tray, spread out.
Roast 15 minutes.
Turn carrots with a spatula, then roast a further 10 minutes until soft and caramelized with plenty of glaze left on the tray.
Toss carrots in the glaze, sprinkle with parsley if using. Serve as a side and enjoy!
