Ingredients:
12 large eggs
1 cup cottage cheese
1/2 cup shredded sharp cheddar
1 1/2 cup diced deli ham
Salt and pepper
Italian seasoning
1 Tablespoon Dijon mustard (optional)
Instructions:
Preheat oven to 350F and prep muffin tin by spraying with non-stick spray.
In a large bowl, combine the eggs, Dijon mustard, cottage cheese, ham, italian seasoning, salt and pepper to taste.
Scoop 1/4 cup of the ham and egg mixture into each muffin tin cup.
Sprinkle each egg cup with shredded cheese.
Bake in muffin tin for 20-25 minutes.
Serve and enjoy. Refrigerate leftovers in an airtight container for up to 4 days. Reheat and serve as desired.
