Ingredients:
3 tsp Chili Powder
1 tsp Ground Cumin
1 tsp Black Pepper
¼ tsp Salt
4 boneless and skinless chicken breasts, cut into halves
2 tsp Canola Oil
1 can (15oz) Black Beans - rinsed and drained
1 cup Frozen Corn
2 cups Rice
Freshly chopped cilantro (optional)
Instructions:
Wash and cook rice according to package instructions. Typically 20 minutes.
While the rice is cooking, in a small bowl: Mix seasonings and sprinkle over both sides of chicken halves.
In a large skillet over medium heat, heat up oil and brown chicken on both sides.
To the same pan, add: Beans and corn.
Cook for an additional 10-15 minutes until the chicken is fully cooked, , or the chicken reaches an internal temperature of 165 degrees Fahrenheit. If your chicken pieces are larger, they may need additional time in the oven until fully cooked.
Mix corn and beans occasionally to prevent burning and sticking to the pan.
Once the chicken is fully cooked, serve and enjoy!
