Ingredients:
1 pound boneless, skinless chicken breasts, diced
4 large bell peppers
2 tablespoons chipotle seasoning
Optional: 1/2 cup corn or black beans for added flavor and texture
1 tablespoon water
Instructions:
Preheat your oven to 350 degrees Fahrenheit.
Begin preparating peppers by cutting the bell peppers in half and remove the seeds. Place them in a baking dish and set aside.
In a bowl, combine the diced chicken, chipotle seasoning, and a tablespoon of water. Adjust the quantity of chipotle seasoning based on your desired level of spiciness. If using, add the optional corn or black beans for extra flavor.
Mix the chicken and chipotle seasoning mixture well, then spoon the mixture into the prepared bell peppers, filling them evenly.
Place the stuffed peppers in the preheated oven and bake for 25 minutes, or until the chicken is fully cooked and the peppers are tender.
Once baked, remove the stuffed peppers from the oven. Serve hot as a main dish, accompanied by your favorite kidney-friendly vegetables.
