Copycat Erewhon Kale Salad

Ingredients

  • 1 1/2 tsp lemon juice

  • 1 tbsp olive oil

  • 3/8 tsp dijon mustard

  • 3/4 tsp sf maple syrup

  • handful of kale

  • 45g white beans

  • 20g avocado

  • 10g pumpkin seeds

  • 5g hemp seeds

  • salt and pepper


Directions

  1. To make the dressing mix lemon juice, olive oil, mustard, and maple syrup. Season with salt and pepper.

  2. In a separate bowl massage the bowl with the dressing and salt/pepper. Add your chopped avocado, beans, and pumpkin + hemp seeds.

  3. Dress with additional seasonings and lemon juice.
