Ingredients:
1-2 Large Cucumbers, washed, thinly sliced into rounds
1/4 Red onion, thinly sliced
1 Green Onion
1-2 Tbsp Rice Wine Vinegar
2-3 Tbsp Honey or Agave
1-2 Tbsp Low-Sodium Soy Sauce or Coconut Aminos, optional
Ground Black Pepper to taste
1-2 Tbsp Salt
Dill, washed, chopped
Instructions:
Wash all ingredients and cut accordingly.
Place cucumbers in a bowl and pour over salt. Massage salt into cucumber and let sit for 5-10 minutes. After 5-10 minutes, drain salt water, rinse, and drain water again.
Into a large bowl, add all ingredients and toss to combine.
In a smaller bowl, mix honey, vinegar, soy sauce together to create the salad dressing.
Pour dressing over vegetables and toss to combine.
Top with black pepper and dill, and serve!
