Cucumber Salad

Ingredients:

  • 1-2 Large Cucumbers, washed, thinly sliced into rounds

  • 1/4 Red onion, thinly sliced

  • 1 Green Onion

  • 1-2 Tbsp Rice Wine Vinegar

  • 2-3 Tbsp Honey or Agave

  • 1-2 Tbsp Low-Sodium Soy Sauce or Coconut Aminos, optional

  • Ground Black Pepper to taste

  • 1-2 Tbsp Salt

  • Dill, washed, chopped


Instructions:

  1. Wash all ingredients and cut accordingly.

  2. Place cucumbers in a bowl and pour over salt. Massage salt into cucumber and let sit for 5-10 minutes. After 5-10 minutes, drain salt water, rinse, and drain water again.

  3. Into a large bowl, add all ingredients and toss to combine.

  4. In a smaller bowl, mix honey, vinegar, soy sauce together to create the salad dressing.

  5. Pour dressing over vegetables and toss to combine.

  6. Top with black pepper and dill, and serve!
