Homemade Tomato Soup

Serves: 8 servings




Ingredients:

  • 5 Roma Tomatoes

  • 2-3 Garlic Cloves, whole

  • 1 Bell Pepper, Whole - Yellow, Orange, or Red

  • 2 Tbsp Olive Oil

  • 2 tsp Salt

  • 2 tsp Pepper

  • 1 Tbsp Italian Seasoning

  • 2 tsp Crushed Red Pepper (optional)

  • 1 Tbsp or 1/4 cup Heavy Cream (optional)

  • Basil leaf for garnish (optional)


Instructions:

  1. Preheat the oven to 350 degrees F.

  2. Slice tomatoes in half or in quarters, peel garlic cloves, and slice and deseed bell pepper.

  3. Place tomatoes, garlic cloves, and bell pepper into an oven safe dish. Pour over olive oil, and add seasonings.

  4. Place into the oven for 10-15 minutes for 10 minutes or continue to cook until tomatoes and bell pepper have softened.

  5. Pour all ingredients into a blender and blend until the soup reaches the desired texture. Blend for a few seconds to until soup is smooth.

  6. Add heavy cream into the blender if desired. This will make your soup a bit creamier.

  7. Finish off by serving. Garnishing with black pepper, basil, or pair with a homemade grilled cheese. Enjoy!
