Kale, Potato, Lentil, and Chicken Soup in a Slow Cooker

Prep Time: 15minutes Cook Time: 4 hours Total Time: 4 hours 15minutes


Serves: 8 servings


Ingredients:

  • 1 lb boneless chicken breast or thighs

  • 8 cups Vegetable or Chicken Broth

  • 1 cup Lentils, washed

  • 1 cup beans - white, chickpea, red, mung.

  • 1 Large handful of Kale, washed, stems removed, sliced

  • 2 Large Potatoes, washed, peeled, cut into cubes.

  • 2-3 tsp Salt

  • 2 tsp Black Pepper

  • 1.5 tsp Italian Seasoning

  • 1 tsp Cayenne Pepper (optional, spicy)

  • 1 Rosemary Leaf (optional)

  • 2 Tbsp Olive Oil

  • Parmesan Cheese (optional, garnish)


Instructions:

  1. Wash all ingredients and slice vegetables accordingly to prepare them for cooking.

  2. Place all ingredients in a slow cooker and stir to combine.

  3. Turn on, cover, and cook on high for 4 hours, or low for 6 hours.

  4. Once done, chicken will be fully cooked and potatoes will be soft and tender.

  5. Remove chicken and shred before returning it to the slow cooker.

  6. Taste and add more salt and spices as needed.
