Ingredients:
1 lb beef cut of choice, cut into slices
3 cups of soy sauce
3 cups of vinegar
3 Garlic Cloves, minced
1/2 small Onion, sliced
1 tsp Black Pepper
1-2 Tbsp Oil
1 medium Zucchini
1/2 tsp Cayenne Pepper
1/4 tsp salt
1/4 tsp pepper
3 Tbsp Lemon Juice, ~1/2 small lemon
3 Tbsp water
Rice of Choice: White, Brown, Wild
Instructions:
Cook rice based on package directions.
In a medium to large bowl, mix together soy sauce, vinegar, minced garlic, and sliced onion. Add sliced meat into soy-vinegar marinade.
Place and refrigerate for at least 15-20 minutes.
While the meat is marinating, prepare zucchini by slicing them into half an inch rounds, or into sticks - whichever you prefer.
Heat the skillet and add oil to the pan.
Place zucchini onto the pan, stirring occasionally to prevent sticking to the pan or burning. After a couple minutes, add water and lemon juice to pan. After a couple of minutes, sprinkle salt, pepper, and cayenne pepper over zucchini and mix. Cook until the zucchini is soft and cooked. Remove from the pan and set aside.
In the same pan, add meat slices to the pan. Flip occasionally, until cooked.
Plate cooked meat and vegetables with cooked rice and enjoy!
