Quick One Pot Lasagna

Ingredients:

  • 3 Italian sausage links, without the casing

  • 1 8-ounce can tomato sauce

  • 1 14.5-ounce can diced tomatoes

  • 8 ounces farfalle pasta

  • ¼ cup grated parmesan

  • 1 cup shredded mozzarella cheese

  • 1 cup ricotta cheese

  • 2 tablespoons chopped parsley leaves

  • 1 tablespoon olive oil

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • ½ tsp garlic powder

  • ½ tsp crushed red pepper flakes

  • Season to taste with salt and pepper


Instructions:

  1. Heat olive oil in a large skillet, add Italian sausage, and cook until browned (roughly 3-5 mins).

  2. Add in diced tomatoes, tomato sauce, basil, garlic powder, oregano, red pepper flakes, and salt and pepper to taste and stir until well combined.

  3. Bring to a simmer, then add in 2 cups of water and the pasta and stir until well combined.

  4. Bring to a boil, cover and reduce the heat to simmer until the pasta is cooked (about 13-15 mins).

  5. Remove from the heat and stir in the mozzarella and parmesan.

  6. Use a cookie scoop to add dollops of ricotta on top.

  7. Cover until heated thoroughly (roughly 2-4 mins), garnish with parsley, and serve.
