Scrumptious Salsa

Prep Time: 5minutes mins Total Time: 15minutes mins



Ingredients:

  • 2-3 Garlic Cloves, whole

  • 1/4 medium Onion

  • 4-5 Tomatoes, whole

  • 1 Jalapeno, whole (optional, spicy)

  • 1/2 cup Cilantro

  • Salt


Instructions:

  1. Wash and dry all produce.

  2. Chop cilantro and set aside.

  3. Roast tomatoes, onion, and jalapeno. This can be done in an InstantPot, the oven, the grill, or in a pan over the stove. Roast until all sides are blackened and bubbly.

  4. While vegetables are roasting, smash garlic in a bowl. Add a generous pinch of salt.

  5. Once vegetables are done roasting, place roasted vegetables in the same bowl as the smashed garlic, smashing one-by-one.

First place the onion in and smash. Then add the jalapeno and smash. And lastly the tomatoes and smash.

  1. Taste test. Add more salt if needed.

  2. Pair with your meal or some tortilla chips and enjoy!
