This rice dish is a quick and yummy meal for the entire family to enjoy! The ground turkey is a great lean meat option. Adding zucchini, carrots, and cucumber is a great way to incorporate more veggies to your meal while also giving it a satisfying crunch. Enjoy!
Bahn Mi Ground Turkey Bowl
Ingredients
1 lbs. ground turkey
2 cups rice
1 cup thinly sliced cucumber
½ medium yellow onion
½ cup shredded carrots
2 tbsp sriracha
1 tsp garlic
¾ cup mayonnaise
¼ cup soy sauce
¼ tsp salt
¼ tsp pepper
2 tsp sugar
1 small lime (optional)
1 avocado (optional garnish)
Sesame seeds (optional garnish)
Directions
Rince rice until water runs clear. Add to small pot with 4 cups of water and a pinch of salt. Bring to a boil, then cover and reduce heat to low. Cook until rice is tender, about 15 minutes.
While rice cooks, wash and dry all produce. Slice cucumber into thinly sliced half moons. Zest quarter of lime. Cut onion.
In a separate small bowl, combine sriracha, mayonnaise, pinch of garlic and squeeze of lime juice.
Heat drizzle of oil in large pan over medium-high heat. Add onion, stirring often until softened. Add ground turkey and season with garlic, sugar, salt and pepper to taste. Cook until turkey is browned and cooked through, about 4-5 minutes stirring often. Add in soy sauce and salt and pepper to taste. Turn off heat.
Fluff rice with fork and stir in 1 tbsp of butter. Arrange rice and ground turkey at the bottom of a bowl. Add shredded carrots and cucumber on top. Garnish with avocado, lime zest and juice, and sesame seeds (optional). Drizzle with sriracha mayo.
